Better-Than-Takeout General Tso's Cauliflower (vegan, gluten-free)

Is everyone over the cauliflower craze? Cauliflower rice, cauliflower pizza, cauliflower gnocchi? How can a simple, white, cruciferous vegetable be so many things? It's too much for one veggie to take on!


I think the humble cauliflower has always been great on its own, and it just took some more exciting titles for it to be recognized and appreciated!


Cauliflower is great because it's flavor isn't too strong-- so you can add whichever you like and POOF it's transformed! It crisps, steams, grills and roasts perfectly. Plus, it's got lots of nutritional benefits too (immunity support, digestion assistance and boosted brain function, to name a few!)


Whether you're a true cauli-fan or not... this recipe will make you a believer!

It combines all of the flavors you love from General Tso's takeout with the super-powerful cauliflower!


This recipe is gluten-free, vegan, and soy-free optional!

INGREDIENTS


Cauliflower Batter:

  • 1 cup almond flour

  • 1/4 cup tapioca flour

  • 1/2 cup plain, unsweetened almond milk

  • pinch of salt

  • 1/2 head of cauliflower, cut into florets


General Tso's Sauce:

  • 1 Tbsp toasted sesame oil

  • 2 cloves garlic, minced

  • 1 tsp fresh ginger, chopped

  • 2 Tbsp coconut sugar or brown sugar

  • 2 Tbsp rice vinegar

  • 3 Tbsp coconut aminos, soy sauce or tamari

  • 1 Tbsp water

  • 2 Tbsp tapioca flour

  • pinch of salt


Optional Toppings:

  • toasted sesame seeds

  • chopped scallions


INSTRUCTIONS

  1. Pre-heat oven to 350 degrees. Line a baking sheet with parchment paper.

  2. In a large bowl, combine all of the cauliflower batter ingredients.

  3. Coat the cauliflower florets in the batter one-by-one, and add them to the baking sheet.

  4. Bake the cauliflower for 20-30 minutes, or until crispy.

  5. While the cauliflower bakes, add all of the General Tso's sauce ingredients to a small sauce pan. Bring to a simmer and stir continuously until the sauce thickens.

  6. Coat the crispy cauliflower with the General Tso's sauce.

  7. Optional: sprinkle with sesame seeds and scallions
